Healthier Starbucks Oat Fudge Bars (made with leftover oatmeal)

Ingredients

  • 1 cup leftover oatmeal

  • 1/3 cup Greek yogurt

  • 3 tbsp ghee

  • 1/3 cup maple syrup or honey

  • 1 egg

  • 1 tsp vanilla

  • pinch of salt

Dry:

  • 1/2 cup rolled oats

  • 1/3 cup All purpose flour 

Fudge layer:

  • 1/2 cup chocolate chips

  • 2 tbsp milk/cream

  • 1 tbsp ghee

Instructions:

  1. Mix together all the ingredients starting with the leftover oatmeal + wet ingredients. Then add the flour and oats. 

  2. Melt fudge ingredients together in a double boiler or microwave until smooth

  3. Add ⅔ of the oat mixture to an 8x8 baking dish lined with parchment paper. 

  4. Add fudge layer and spread evenly. 

  5. Scoop over ⅓ of remaining oat batter and spread as best as you can.

  6. Bake at 350F for 35 mins or until slightly golden and set. 

  7. Let cool for 20 minutes before cutting into it. 

  8. Optional but recommended: Flaky sea salt to top it at the end
