Soft Raspberry Oatmeal bars

A cozy, nourishing way to use up leftover oatmeal — soft in the middle, lightly golden on top, and just sweet enough.

Ingredients

  • 1 cup leftover cold oatmeal

  • ¼ cup Greek yogurt

  • 3 tbsp ghee (melted)

  • ¼ cup maple syrup or honey

  • Splash of vanilla

  • Pinch of salt

  • 2 tbsp milk

  • 1 large egg

  • ⅓ cup flour

  • ½ cup rolled oats

  • 1 tsp baking powder

  • ¾ cup frozen raspberries

  • Sliced almonds, for topping

Instructions
Preheat oven to 350°F (175°C) and line an 8x8 baking dish with parchment paper.

In a bowl, mix together the cold oatmeal, Greek yogurt, melted ghee, maple syrup, vanilla, milk, and egg until smooth.

Add in the flour, rolled oats, baking powder, and salt. Stir until just combined.

Gently fold in the frozen raspberries.

Pour the mixture into your prepared baking dish and smooth the top. Sprinkle with sliced almonds.

Bake for 25–30 minutes, until set and lightly golden on top.

Let cool slightly before slicing. Store in fridge. Delicious warm or cold.
